Adam's wife, Kristen, is Adam's assistant chef on Tuesdays. She helps wherever she can and plays a key role in making sure that they get the meals out on time.
Adam has an extensive background in culinary. Prior to launching his own business he was head chef of several different restaurants. "I started out busing tables and gradually worked my way up."
Tyger River Farm is one of several farms that sells products through the Mobile Market. Ryan, owner of Tyger River Farms, began selling products to Adam when he first launched nearly three years ago. They continue to provide weekly produce to Adam.
If they aren't able to sell everything on the mobile market, Adam makes sure nothing goes to waste. The fresh produce is turned into meals that feed hundreds of individuals every week.
Adam's enthusiasm and big heart were evident during the short time he graciously allowed us to invade the kitchen at Greenbrier Farms. "We are working with great local people and a great community," he told us. "Community support is bar-none what has kept us rolling through the years. I hope to make a difference, and that helps me sleep better at night."
Cast iron is an absolute must in Adam's kitchen.
"There are so many great farms in the area. We generally don't attend farmers markets because often we would be competing with the people that provide products for us. Our ultimate mission is to connect families and farmers. In doing so we are providing healthy local products that are easy for individuals and families to consume."
Almost all of his ingredients are organic and farm fresh. He ensures that nothing goes to waste. Even the trash is turned into compost to spread over gardens or be fed to the farm's pigs. It is essential to Adam that he utilizes the products to their fullest potential.
Twice baked sweet potatoes stuffed with caramelized onions and topped with melted bleu cheese may sound different, but trust us, it's a glorious combination of flavors.
Even if you provide someone with a quality product not everyone will know what to do with it. So, with that in mind, every few months Adam hosts cooking classes to help engage the community and teach them how to use the ingredients he sells.
Adam's meals go to the Greenville Health System, assisted living facilities, and several charities across the upstate. On Thursdays, his mobile market will often go to businesses or private individuals. This allows for the business to provide a health and wellness amenity for their employees.

Adam's "work" has become a lifestyle and he purposefully ensures that family and friends are put first. "It's fun working with family and friends. I love teaching the people that we meet that you can do what you love as long as you have the passion for it."
